Most honey tastes like flowers. This one tastes like trees. The beekeepers at Jirisan Apothecary keep their hives at 800 meters elevation, where the bees forage pine pollen for a few weeks each spring. The resulting honey is dark amber, slightly resinous, with a finish that hangs in your mouth like the smell of a temple. Drizzle it on yogurt with walnuts. Stir it into hot water with ginger when you're getting sick. Don't waste it on toast.
