Moon Ferment Co. is two siblings on Jeju Island who started bottling their grandmother's gochujang because they couldn't find one that tasted right anywhere else. Hers had anchovy stock in it — a quiet trick from coastal Korean cooking that adds umami without ever announcing itself. Stir it into bibimbap, dot it onto grilled vegetables, mix it with sesame oil for a dipping sauce. Once you've cooked with this, ordinary gochujang feels like the lights are off.
